Basic pancake recipe

1 cup (buckwheat) flour

1 banana (mashed)

1 cup plantbased milk

oil to bake (coconut or sunflower)


Toppings: cinnamon, cacao, sliced apple or banana (in batter), blueberries, nut butter, coconut yoghurt, tahini agave glaze, date syrup-cacao-maca chocolate sauce, chia pudding

Optional: instead of flour and mashed banana, use 2 cups of sourdough (ratio: 1 part discard, 1 part water and 1 part flour, rested overnight)
