Lemony herby olive oily root veggies

Ingredients in different ratios:


Sweet potato or butternut squash

Dried oregano

Garlic gloves

Bay leaves

Lots of your tastiest olive oil

Water

Lemon + juice

Salt and pepper to taste


Optional: top with pomegranate seeds, almond flakes and fresh herbs. Instead of root veggies use green beans, cannellini beans, carrot or sweet potato and one medjool date. Add green olives
