2 sweet potatoes
1 large carrot
1 lemongrass stem
2 garlic gloves
1 ts freshly grated ginger
2 fresh chilli peppers
1 lime
400 ml full fat coconut milk
2 ts turmeric
1 tbs vegetable oil
Heat the oil in a large pot and add the peppers, ginger, lemongrass and garlic. Chop the vegetables and add enough water into the pot for the vegetables to be covered. Boil softly untill everything is soft. Add the coconut milk and mix into a soup, using a blender (without the lemongrass!). Reheat and enjoy with lime juice and any of your favorite soup topping (like crispy chickpeas).
